Green Bean Stew - Lebanese Inspired

This dish is so quick to throw together. It's super comforting and full of delicious warm flavors. I hope you give it a try and let me know what you think!



INGREDIENTS:

1 medium onion diced

3-5 garlic cloves minced

2 cups chopped portobello mushrooms

1 can garbanzo beans (drained and rinsed)

4-5 cups green beans (cut bite sized -fresh or frozen)

1 can petite diced tomatoes

1 can tomato sauce

2 tbs. tomato paste

1-2 cup vegetable broth

2 tsp. Cumin

1/4 tsp. Cinnamon

1/4 tsp. Ginger

Salt and pepper to taste

Sauté onion and mushrooms over medium high heat until onion is translucent. Add in and sauté with garlic until fragrant. Stir in green beans, garbanzos, diced tomatoes, tomato sauce, tomatoes paste, vegetable broth and spices. Bring to a boil then reduce heat to low. Simmer until beans are tender and the stew begins to thicken, About 20-30 minutes.


Top with Culina plain yogurt, garnish with parsley and serve with rice.
