Deviled Potatoes

Deviled potatoes!! These things will blow your mind! This is great recipe for a holiday dinner or potluck but these are good for any day in my opinion!





The amounts in this recipe is for approximately 15 “egg sized” golden or red potatoes (makes 30 deviled potatoes)

Ingredients:

* 1/3 cup vegan mayonnaise

* 2 tablespoon dijon mustard

* 1 tablespoon yellow mustard

* 1/2 teaspoon Black Salt (kala namak

* 1 teaspoon dill

* 1/4 teaspoon black pepper

* 1/4 teaspoon turmeric

* 1/4-1/3 cup unsweetened non dairy milk (I use soy milk)

* Smoked paprika, for garnish

* Chives for garnish


Instructions:

-Steam or boil your potatoes whole.

I steamed them in my instant pot for 3 minutes on high pressure and released pressure immediately when then were done.

-Allow to cool a few minutes and then cut in half long ways and scoop out the inside leaving enough to make a little baby potato bowl. Put the potato you scoop out in a separate bowl to make the filling.

-To make your potato filling, add in 1/3 vegan mayonnaise, 1-2 tablespoons Dijon mustard, 1 tablespoon yellow mustard, 1 teaspoon dried dill or fresh if you have it, 1/2-1 teaspoon black salt (kala namak), 1/2 teaspoon turmeric, 1/2 teaspoon black pepper and I use garlic salt to taste.

-use an electric mixer to combine your ingredients to make the filling adding non dairy milk to get the right consistency. (Add more mustard and spices to get the flavor right for you)

-Once your filling is perfect and smooth. Put it in a piping back to easily fill your little potato bowls.

-Garnish with smoked paprika and chives and Enjoy!
