HIGH PROTEIN BREAKFAST SANDWICH | A healthier McMuffin?

This hits all the marks! Warm, crunchy, chewy, salty, a bit sweet... you get it all with this one. It's a super easy recipe too! I got the idea when we stopped by a place called DC Vegetarian in Portland and got some breakfast. I knew I had to recreate it once I got home... and here it is! RECIPE What you need (product wise): 2 english muffins (I used whole wheat ones but you do you.) 1 package of medium tofu (soft would work too!) 1 package of smoked tempeh (If you can't find smoked tempeh, sub for Gardein Breakfast sausage - they look like this and are dang delicious http://bit.ly/2nEZFsn) Daiya block cheese - I used the smoked gouda flavour RECIPE Tofu Patty Cut your tofu block in half. The patties should be 3/4 inch thick. This will allow them to soak up more marinade. Then cut out two circle sized pieces from your tofu block (watch video so this makes sense!). Tofu MARINADE mix together the following in a small bowl: 1/2 tsp turmeric 1/2 tsp garlic powder 2/3 tsp onion powder 1/4 tsp smoked paprika 1 tbsp nutritional yeast 2 tsp maple syrup 1/2 tsp salt pinch of black pepper 3 tbsp water once mixed, add to a shallow dish and place tofu patties on top. Make sure to flip a few times, and squish down so they soak in the flavour. Leave in the fridge overnight (that is what I did) or cook straight away (flavour might not be as good, but still there!). To cook, pan fry patties on medium heat in a small amount of water or oil, flipping once each side. The patties are delicate! While the patties are cooking, cut 6 strips of smoked tempeh out and pan fry along with the patties, in the same pan or a different one. Making sure they brown on each side. Turn off heat once everything is cooked on each size. Cut slices of the cheese out and place some on each warm tofu patty, it may melt in the pan or you may need to place patty in the toaster oven like I did in the video to melt it. If you are using the gardien breakfast sausages instead of tempeh, cook according to package instructions. Make sure to toast your english muffins, and once everything is done, assemble your burger! I put sliced tomato, greens, ketchup and hot sauce on mine... you can go crazy and add whatever you want. Enjoy! Sweet Simple Vegan's Spring Meal Prep: https://youtu.be/wx3ZqkBKKWE ↠ Subscribe to my channel here ↠ https://bit.ly/2uAQgS7 RECIPES + METHODS: ↠ Pickled Red Onions 1 large red onion, thinly sliced 2-3 sprigs of dill Place in a container with a lid and cover with apple cider vinegar (about 1.5 cups) Sprinkle in 2 tsp salt, 2 tbsp of maple syrup, and black pepper. Refrigerate overnight and it's read to go. I follow this recipe from my friend Malin at Good Eatings (but I leave out the garlic and sub dill) https://www.youtube.com/watch?v=gdKB3ZR7nlw ↠ 15 Minute Potato Wedges Preheat oven to 400 degrees. Cut cooked potatoes into wedges. Sprinkle generously with salt, pepper, garlic powder, paprika, and a drizzle of olive oil. Toss to combine and bake for 15 minutes or until golden brown. Top with chopped scallions, cilantro, and red pepper flakes. Serve with guacamole and enjoy! ↠ Cauliflower Mashed Potatoes Recipe: https://nikkivegan.com/cauliflower-mashed-potatoes/ ↠ Easy Grain Bowl with Cashews and Carrot Ribbons Place warm rice on a large plate. Add lettuce and set aside. Create carrot ribbons (1 large carrot per person) and put in a bowl with a pickled red onions, cashews, raisins, a squeeze of lemon juice, a drizzle of extra virgin olive oil, and a pinch each of salt, pepper, and cumin) Add to the plate and top with hummus. ↠ Super Fast Nicoise Salad mixed greens 1 cooked potato, peeled and cubed 1 handful of green beans olives roasted red peppers pickled red onions scallions (optionals) creamy vinaigrette of choice (recipe in tomorrow's video) Steam green beans for 2-3 minutes. Place 3 handfuls of lettuce on a large plate. Top with potatoes, green beans, olives, red peppers, pickled red onions, and a generous drizzle of vinaigrette. Side note: I use way more dressing than I showed in the video! I only used a little so I could take pictures of the salad but afterwards I added more lol Make sure you tune in tomorrow to get the recipe for this easy, oil-free salad dressing recipe :) ↠ Roasted Red Pepper Pita Pizzas pita Roasted Red Pepper Spread cooked cauliflower Italian seasoning vegan parmesan pickled red onions (or jalapeños or pepperoncinis) fresh basil red pepper flakes Pre-heat oven to 375 degrees. Spread roasted red pepper spread in a thin layer on top of each pita. Top with chopped cauliflower, sprinkle generously with Italian seasoning, and vegan parmesan cheese. Bake for 10 minutes or until golden brown. Top with chopped pickled red onions, fresh basil, and red pepper flakes. VEGAN SAUSAGE SEASONING BLEND: https://www.youtube.com/watch?v=UqH5ryXOnJo ↠ Vegan Cauliffredo Pasta (makes enough sauce for 2 servings) 1/2 large head of cauliflower (about 3.5 cups chopped) 2 small garlic cloves or 1/2tsp of garlic powder for a more mild flavor 2 tbsp cashew butter (about a golf ball size rounded tbsp) 1/2 tsp onion powder 1/2 tsp white pepper 8 grinds of sea salt, or more to taste 1/2 cup unsweetened almond milk In a blender add garlic, onion powder, white pepper, salt, cashew butter, slightly cooled cauliflower, cooking water, and almond milk. Blend on high for at least 30 seconds until perfectly smooth and creamy, then pour over hot, cooked pasta and top with chopped chives and/or vegan parmesan cheese. ↠ Scandinavian Style Open Faced Sandwich 2 slices of whole grain bread, I use Ezekiel bread 1 tsp Follow Your Heart Pesto Veganaise 2 slices smoked gouda vegan cheese (I like VioLife and Follow Your Heart) Top with pickled red onions, thinly sliced cucumbers, a fresh basil ( I use one leaf per toast and just tear it into small pieces) and finish with black pepper and red pepper flakes. ↠ Red Pepper Veggie Burgers 1 Burger Bun, toasted 2-3 tbsp Roasted Red Pepper Spread 1 vegan burger patty spinach thinly sliced cucumbers pickled red onions ↠ Creamy Cauliflower and Zucchini Bake Preheat oven to 400 degrees. 2 cups cooked potatoes 1 cup chopped zucchini 1 cup cooked cauliflower Combine in a bowl and season generously with salt and pepper. Transfer to an oven safe dish and top with 1 batch of Cashew Sage Cream Sauce (recipe in tomorrows video). Top with breadcrumbs, a generous sprinkle of dried thyme, and 2 tbsp of vegan parmesan cheese. Bake for 15 minutes or until golden brown. Get cast-iron pan rippin’ hot and heat up 2 tbsp oil and swirl to evenly coat. Place mushrooms, stem side down, into the pan on the outer edge hot spots. Press mushrooms with another cast-iron pan/heavy pot. Apply a little pressure until you hear the sizzle. Lift top pan, wipe off liquid with towel, set to the side. Mushrooms will be releasing liquid, leave the water to evaporate for a couple of minutes. Add beer to BBQ sauce in a bowl. Season mushrooms with BBQ blend seasoning, black pepper, granulated garlic, salt and a 1 ½ tbsp oil. Flip mushrooms carefully with tongs. Repeat the pressing step again and leave to cook for a few more minutes. Season mushrooms again with bbq seasoning, granulated garlic, black pepper and salt. Add a little oil around the edge of the pan and swirl, to prevent sticking, then flip mushrooms carefully again. Turn mushrooms again until charred and crispy on both sides, then place gently into the bowl of BBQ sauce, push down with hands until mushrooms are completely coated. Place saucy mushrooms onto a parchment lined baking sheet and add a little more BBQ sauce to the top of each mushroom. Cook in oven for 10-15 minutes. Remove from oven, serve on a chopping board, garnish with green onion.
