Vegan Chicken Salad | Better Than Whole Foods!
This is our take on the Whole Foods Market vegan chicken salad and we think it's a game changer! You've gotta try this simple recipe out and let us know what you think. Perfect for those non-vegan friends and family members!
Ingredients: One package of Delightful Foods - Soy Nuggets
1/2 cup celery
1/2 cup diced red onion
1/3 cup chopped fresh parsley
1/3 cup vegan mayo
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/8 teaspoon salt
1/4 dried cranberries (optional)
Recipe: In a food processor, pulse celery and red onion until finely diced.
Add in half of the soy nuggets and pulse to chop. Once more room is made in your food processor add in the rest of the of the nuggets, being careful to not over process the mixture (we don't want mush!).
When your nuggets and veggies evenly combined, toss in your parsley and spices then pulse just a few more times to distribute evenly. You could add in your mayo, but I prefer to pour out the chk'n salad into a bowl and fold in the vegan mayo.
Add more spices or mayo to taste and ENJOY!
(Just to mention the obvious, all of this can be done by chopping, dicing and mixing in a bowl but today I decided to use the food processor)
