Semi-homemade Vegan Alfredo
I'm sure I'm not the first to do this but I have discovered a super yummy Daiya hack!Â
You know their packaged Mac & Cheese, alfredo and other pastas? Well, I'm not a huge fan of the gluten-free noodles they comes with. So I like to use my own.Â
Today I had the Alfredo box. Now, to really take it to the next level... I like to sauté some garlic, onion and mushrooms while I boil my pasta. Today I used bowtie pasta, cause Piper thinks "it's just the cutest!" I tossed some frozen broccoli in with the pasta to cook for the last few minutes. When the pasta is cooked properly, drain, but keep just a bit of the pasta water aside. Now, pour the pasta and broccoli back into the pot and mix in your onions & mushrooms along with the Daiya Alfredo packet. If needed add a bit of the pasta water to make sure everything is good and creamy! Serve in your favorite bowl and top with fresh cracked pepper.
IT IS AMAZING! So good that no one would even know it's only semi-homemade!
