Creamy Broccoli Potato Soup

An experiment gone right!! This soup is so tasty and comforting, especially as the weather starts to cool down a bit. I just got finished licking my bowl so I promise you, it's delicious!

Ingredients:

  • 32 oz. Veggie Stock

  • 2-3 large carrots, peeled sliced

  • 2-3 stalks of celery diced

  • 4 medium potatoes, peeled and cubed into small pieces

  • 1 medium onion, diced

  • 3 cloves of garlic, minced1/2 cup raw cashews (preferably soaked, but if not, no biggie!)

  • 4 cups broccoli florets (I used frozen)

  • 1.5 tbs corn starch

  • 1.5 cups non dairy milk (I used organic soy)

  • 1/3 cup nutritional yeast

  • 1 tsp. salt½ tsp. pepper

  • 1 tsp. dried Chives

  • 1 tsp. dried parsleyOptional: a bit of Vegan butter or oil to help saute veggies (I just used a bit of stock to keep in oil free this time.)


How it's Made:


In a large pot or dutch oven... Saute onion, 2 of the minced 3 garlic cloves, carrot and celery. Once the onion turns translucent, add in 3 of the 4 diced potatoes. Pour in most of the veggie stock and bring to a soft boil. Leave about a 1/2 cup of stock aside to make the cream.


Steam your 4th diced potato how ever you choose. I just tossed mine in a bowl covered with water in the microwave for about 5 minutes. (I also, steamed my broccoli in the microwave as well)


Now for our cream mixture... In a high speed blender, dump in your cashews (drained if they've been soaked), non-dairy milk, 1/2 cup stock, clove of garlic, steamed diced potato,  nutritional yeast and corn starch. Blend until creamy.


Pour cream mixture into your soup. If your a messy cook like me you've probably been moving slow enough that your carrots and potatoes have had enough time to cook down a bit. Stir to get your cream and stock all combined and then add in your steamed broccoli and seasonings. Let simmer on low for about 15-30 minutes just to let all the flavors marry. My seasoning are always just more of a suggestion. You do you, and make it just how ever you like it!!
